祝各位復活節快樂!魔鬼蛋(Deviled Egg)是西方派對上常見的一道開胃菜,做法簡單方便,配料變化多端。傳統的魔鬼蛋會先將雞蛋煮熟,取出蛋黃並加入蛋黃醬、茄膏、醋和鹽等拌勻,再釀回蛋白窩中。今次我用了同一個概念,添上新意,做了另一款以牛油果為主角的版本。把原有的蛋黃醬換成原味乳酪,以少量日式胡麻醬、紅椒粉和黑胡椒粉調味。這個改良過的做法較為輕盈低卡,吃起來應該沒有那麼大罪惡感吧,倒不如換個名稱作「天使牛油果」會否更適合呢哈哈~ 牛油果含有豐富不飽和脂肪酸和纖維,有助降膽固醇,幫助腸臟蠕動及穩定血糖。這道菜式可作日常的早午餐,飽腹感滿分,無需爐火,小朋友也可參與其中,簡單快捷之餘味道亦一級棒呢!
材料:
牛油果一隻,小番茄六粒,厚切火腿半塊,核桃兩粒,原味乳酪兩湯匙
調味料:
日式胡麻醬半茶匙,紅椒粉適量,黑胡椒粉適量
做法:
1)小番茄及火腿切粒,核桃用手剝碎
2)牛油果切半去核,打菱角切起肉倒入一碗內將其挖空,外殼備用
3)將牛油果壓成蓉,加入乳酪拌勻,再加入番茄粒,火腿粒和麻醬稍微拌勻
4)把(3)緩緩釀入牛油果殼,放上核桃碎,灑上紅椒粉和黑胡椒粉即成
小貼士:
a)可因應個人喜好隨意加入其他配料
b)我選用了低卡的日式胡麻醬調味,若果覺得不夠鹹的話可自行加鹽
c)牛油果必需新鮮即吃,否則好快便會氧化變黑
Ingredients:
1 Avocado, 6 cherry tomatoes, 1/2 piece of thick cut ham, 2 walnuts, 2 tbsp natural yogurt
Sauce:
1/2 tsp Japanese sesame dressing, sweet paprika and black pepper
Method:
1) Cut cherry tomatoes and ham into small dices. Chop the walnuts
2) Cut the avocado in half and remove the kernel
3) Slice the avocado diagonally and put it into a bowl. Set both avocado and its skin aside
4) Combine the avocado mash with natural yogurt. Add tomatoes, ham and sesame dressing
5) Place Step 4's mixture into the avocado skin, add walnuts, paprika and black pepper
Tips:
a) You can add any other ingredients based on your own preference
b) I have chosen a low calories version of Japanese sesame dressings, you can add extra salt in it
c) Avocado has to be consumed once you peel it off
